1 onion
200g cherry tomatoes
1 bag frozen quorn vegan pieces
1 can chopped tomatoes
1 can coconut milk
2 tsp tumeric
1 tsp onion granules
2 tsp paprika
1 tbsp mild curry powder
4 tbps tomato paste
4 tsp smooth peanut butter
1/4 tsp salt
1/4 tsp ground black pepper
Directions
- Peel and chop the onion. Heat 1tbsp olive oil in a large pot or frying pan and cook the onion for 2 minutes
- Chop the cherry tomatoes in half and add to the onions, cook for another 2 minutes
- Add the turmeric, onion granules, paprika, and curry powder to the pan. Cook for another 2 minutes stirring often
- Add the quorn pieces and cook for another 2-3 minutes stiring often
- Add the can of chopped tomatoes, can of coconut milk, tomato paste, peanut butter salt and pepper to the pan. Stir well.
- Simmer over a medium heat for 10 minutes string often then serve.
Notes
- In place of Quorn you can use your favorite vegan meats or use 1 can of chickpeas (drained)
