Ingredients

  • 1 onion

  • 200g cherry tomatoes

  • 1 bag frozen quorn vegan pieces

  • 1 can chopped tomatoes

  • 1 can coconut milk

  • 2 tsp tumeric

  • 1 tsp onion granules

  • 2 tsp paprika

  • 1 tbsp mild curry powder

  • 4 tbps tomato paste

  • 4 tsp smooth peanut butter

  • 1/4 tsp salt

  • 1/4 tsp ground black pepper

Directions

  • Peel and chop the onion. Heat 1tbsp olive oil in a large pot or frying pan and cook the onion for 2 minutes
  • Chop the cherry tomatoes in half and add to the onions, cook for another 2 minutes
  • Add the turmeric, onion granules, paprika, and curry powder to the pan. Cook for another 2 minutes stirring often
  • Add the quorn pieces and cook for another 2-3 minutes stiring often
  • Add the can of chopped tomatoes, can of coconut milk, tomato paste, peanut butter salt and pepper to the pan. Stir well.
  • Simmer over a medium heat for 10 minutes string often then serve.

Notes

  • In place of Quorn you can use your favorite vegan meats or use 1 can of chickpeas (drained)
